Culinary Goddess: Super Healthy Blueberry, Raspberry & Superfood Muffins Recipe

I love to play around with recipes, get creative and make them my own - which is exactly how I came up with the below recipe, which has become very popular and a real favourite with my family and friends.

I took a simple blueberry muffin recipe and adapted it to make it even more jam-packed full of goodness!



I love the Linwoods Super Food mixes, especially the flax, sunflower, pumpkin & sesame seed & goji berry mix (see pic below) - the addition of this to the recipe makes the muffins a bit more mealy and scone-like in texture (but still really good if I do say so myself!) and loaded with vitamin E, iron, fibre, protein, omega 3, potassium and zinc - to name a few!

Bonus - you can sprinkle a little on top of the muffins before they go into the oven to create a healthy, crunchy topping, too! :)

Linwoods Super Food Mix



Ingredients

*Makes 4-5 muffins - but you can easily double the recipe to make more*

  • 1 & 1/2 cups self-raising flour
  • 3/4 cup Splenda (12 tbls) - (or whichever sweetener you prefer)
  • 1/2 tsp salt
  • 1/3 cup veg/sunflower oil (6 tbls)
  • 1 egg
  • 1/3 cup milk (6 tbls)
  • 1 cup fresh blueberries & raspberries (or any berries you'd like)
  • 2-3 heaped tbls Linwoods milled flax, sunflower, pumpkin & sesame seeds & goji berries mix - plus more to sprinkle on top of the muffins.

Gather Your Ingredients


Method

*Preheat oven to Gas mark 5*

Lightly grease muffin tins or line with muffin cases.


1) Sieve flour into a large mixing bowl and combine with Splenda, salt and milled Linwoods super food mix.

2) In a separate bowl, combine the veg/sunflower oil (I used sunflower), the egg and milk.

3) Pour combined wet ingredients into the flour mixture and mix well with a wooden spoon.  Add another dash of milk and/or oil as needed, using your own discretion if mixture seems too dry.  You want it slightly sticky and of a dropping consistency.

4) Fold in berries and mix well.

5) Fill muffin tins/cases right to the top and sprinkle a little of the Linwoods seed & berry mixture onto the top of each muffin to create a crunchy & healthy topping.

6) Place in oven and bake for 20-30 mins or until golden brown on top and a knife inserted into the center of muffins comes out clean.

Voila! Golden Brown & Delicious


Allow to cool slightly in tins, before removing and placing to further cool on a wire rack.



Then dig in & enjoy, guilt free! Yum! :)
